In collaboration with Insula Fersk Fisk, TOC invites you and a colleague to an inspiring morning at Brønnum Food Lab, themed around fish. You will have the opportunity to test the new concept under the professional and knowledgeable guidance of the renowned Michelin chef Francis Cardenau.
Gustaf Olafsson from Insula Fersk Fisk presents their new and groundbreaking concept for flash freezing fish. The method optimally preserves the freshness, structure and taste of the fish. Insula Fersk Fisk and Dansk Cater collaborate with Thorupstrand on environmentally friendly fishing.
